Observed pans stored face down on dirty surface underneath grill. Also observed utensils stored in containers with debris accumulation in reach in drawer under grill, and coffee mugs stored face down on tray with minimal debris accumulation. Also observed ice machine with minimal mold-like build up inside. All food contact surfaces must be cleaned at a rate that precludes soil accumulation. Must clean ice machine within 72 hours. COS by rewashing coffee mugs, coffee mug tray, pans, utensils, container storing utensils, and also wiping down surface underneath grill where pans are stored.

Observed time/temperature control for safety (TCS) foods in walk-in cooler being cold held at temperatures greater than 41°F . The ambient temperature of cooler was 52.5°F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. COS by discarding some TCS foods and moving other items to different units.

Observed black mold along the interior portions of bulk ice machine. COS by immediately discontinuing use of ice and beginning cleaning process. Must increase cleaning frequency at a rate that precludes mold accumulations. Health Authority recommends cleaning weekly or biweekly at the minimum.
