6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Date marking is not consistent. Observed some foods that were dated the day they were opened/prepared and other foods that were dated the day they should be used by. Date marking shall be consistent - Train staff to all date mark the same way. Observed chopped salads without date mark - Packaged salads shall be dated with the date the lettuce is chopped or when the package is opened if lettuce come pre-chopped.
