Observed black mold like substance in the interior of the ice machine. Must clean and sanitize with in 72 hours.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed foods prepared onsite not date marked. Must date mark with new labels. COS by making new labels.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility does not have maximum registering thermometer or heat strips to check the final rinse temperature of the dishwasher. Must provide either heat strips or thermometer.
