Observed several bags of cheese cold held above 41°F in reach in cooler under prep top unit. TCS food must be cold held at 41°F or below. The AAT setting was 40°F, but it was actually 48°F within unit. COS by moving cheese and other TCS foods to different cooler. Must ensure cooler is fixed and AAT is consistently ~37-39°F before cold holding TCS food within it again.
