Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed time/temperature control for safety (TCS) foods in walk-in cooler being cold held above 41°F. Ambient temperature of cooler was around 46°F with the temperature of TCS foods ranging between 45-47°F. TCS foods must be cold held at 41°F or below. COS by discarding. Do not store TCS foods in unit until minimum cold holding temperature can be maintained.

Observed TCS foods in both prep top units in burger assembly area being cold held above 41°F. Several items were recently brought out from walk-in cooler and other items were likely elevated in temperature due to ambient temperature of units not set low enough to compensate for cool air loss during operation. COS by discarding.
