Observed mold on ceiling of right ice machine. Corrective action (CA): Clean as frequently as needed to prevent mold growth. Person in charge (PIC) began burning ice to clean machine during inspection and will use other ice machine until cleaning is complete.

Observed shredded chicken cooling in deep covered container in kitchen reach-in cooler (RIC). Chicken in safe cooling stage and moved to sheet trays to finish cooling.
