Establishment does not have a designated Person in Charge (PIC) on site at time of inspection. Corrective action (CA): The Certified Food Safety Manager (CFSM) shall designate a PIC capable of performing PIC duties whenever the CFSM is not present.

Observed cooked chicken breasts cooling in Walk-in Cooler (WIC) using improper cooling methods (packed into deep covered pans with pans stacked on top of each other). Chicken transferredd to sheet pans on speed rack to facilitate rapid cooling.
