Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer concentration of zero at 3-compartment sink dispenser. Sanitizer bottle empty. Corrective action (CA): For warewashing sanitizer concentration must be 200-400 ppm for quaternary ammonium compound, 50-100 ppm for chlorine, or concentration listed by manufacturer. Person in charge (PIC) set up sanitizer compartment 100 ppm.
