Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chlorine concentration less than 50 ppm at warewash machine. Corrective action (CA): Chlroine concentration must be between 50-100 ppm. Person in charge (PIC) noticed that the detergent and chlorine lines had been switched and connected it. Chlorine concentration 50 ppm after lines were fixed.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no sanitizer stest strips for 3-compartment sink.
