Observed cooked chicken in main kitchen 2-door reach-in cooler with no date mark. All ready-to-eat (RTE) time/temperature control for safety (TCS) foods must be marked with date to indicate 7 day discard date. Verified cook date with person in charge (PIC) and chicken labeled. COS.

Observed veggie empanadas stored in main kitchen 2-door reach-in-cooler with date mark label of 5/10, not used or discarded within 7 days. CA: All RTE TCS foods must be used or discarded within 7 days. If frozen, label must indicate thaw day to verify dates. Items discarded. COS.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Bulk rice scoop observed with broken handle. Scoop removed and replaced with scoop in good repair. Multiple cups used as scoops in upstairs storage room in bulk sugar and spices. All scoops must have a handle, with handle stored out of product.
