Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Three chlorine sanitizer buckets had sanitizer concentration below 50 ppm. Corrective action (CA): Sanitizer should be kept at manufacturer recommended levels of 50-100 ppm. Chlorine buckets remade to proper concentration.
