6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cut cabbage greater than 41F stored on food preparation table. Corrective Action: Time/temperature controlled for safety (TCS) foods must be held at or below 41F. Cut cabbage was removed from cold holding 1 hour prior to inspection to portion and not put back into cold holding. Cut cabbage placed back in cooler during inspection.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed containers without handles used as scoops for bulk rice and sugar. Scoops removed during inspection.
