Observed raw shell egg stored above multiple bulk containers of liquid margarine. Advised PIC that all raw and ready to eat foods shall be stored according to final cook temperature. COS: PIC relocated raw shell eggs below multiple bulk containers of liquid margarine.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink in the main kitchen obstructed by a plastic scoop. Advised PIC that all handwashing sinks shall be easily accessible at all times. COS: PIC removed plastic scoop from the back handwashing sink.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed several items (raw chicken wings, cooked chicken wings, whole onions, and chopped onions) stored uncovered in the walk-in cooler. Also observed seasonings in metal containers near the cookline uncovered while not in use. Advised PIC that all foods shall be stored covered in order to protect from contamination. COS: PIC placed covers on all foods listed.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed multiple bulk containers of soy sauce being used to store raw and ready to eat foods. Advised PIC single-service and single-use articles may not be reused. Advised PIC to cease reusing bulk containers originally used for soy sauce and to obtain appropriate food-grade material bulk containers to store products
