Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed raw shell eggs stored at grill prep work table measuring above 41 degrees F. Advised to discard. CA: All TCS food items shall measure 41 degrees F or below while cold holding.
2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
PIC could not produce signed employee health reporting agreements. Advised to obtain and have all employees sign. CA: Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food;
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed reach in cooler in main kitchen not working. Facility approved for this cold holding unit but unit is not in good repair. Advised to repair or replace. If replaced, must submit manufacturer specification sheet to health authority. CA: All equipment shall be kept in good repair and proper adjustment.
