Observed food employee eating in main kitchen over prep counter. Observed open beverage on prep-counter in main kitchen. Advised PIC that food employee's shall consume food only in designated areas separated from prep and serving areas. Also advised PIC that food employee's shall drink from a single service beverage cup with a secure lid and straw. PIC had food employee stop eating food and discard open beverage.

Observed Kale salad cooling on the front food service line in an improper ice bath(only one layer of ice). Advised PIC of proper cooling methods.
