Observed several TCS food items cooling in steel pans in ice bath but stored outside cooler but ice had melted. COS: PIC placed fresh ice surrounding steel pans. CA: Advised to use proper cooling methods to rapidly cool TCS food items from 135 to 70 degrees F within 2 hours and 70 degrees to 41 degrees or below in 4 hours.

Observed raw beef stored above next to raw chicken in walk in cooler. COS: PIC moved raw beef to separate shelf. CA: Advised to store according to final cook temperature.

Observed TCS food items held in walk in cooler measuring above 41 degrees F. Advised PIC to turn down unit to 37 degrees F. CA: All TCS food items shall be cold held at 41 degrees F or below. PIC adjusted temperature and temps fell. PIC agreed to have unit checked by technician.
