6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple single-service cartons of milk (strawberry. chocolate, and low-fat milk) cold holding in the temperature danger zone at front-food service milk coolers 1 and above 41 degrees F. Advised PIC that when cold holding TCS foods, foods shall range between 41 degrees F. or below. COS: PIC place milk cartons on ice for proper cooling.
