Observed food contact surface of interior of ice bin lid connected to the beverage machine near the wait station stored as clean with black residue. Advised PIC that equipment food contact surfaces and utensils shall be cleaned as often and at any time during the operations when contamination may occur. Advised PIC to clean the cleaning frequency of the ice bin lids.
10D - food properly labeled; original container

Observed multiple sauce bottles unlabeled with common name near the cookline in the main kitchen. Advised IC that once removed from its original container, container contents shall be labeled with its common name on English. Advised PIC to label all sauce bottles near the cookline.

Observed a metal bowl of cooked chicken wings cooling at room temperature on prep table near the fryer basket. Advised PIC on proper cooling methods: under refrigeration uncovered or loosely covered. COS: PIC placed cooked chicken wings in the WIC for proper cooling.
