11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed multiple containers of cut tomatoes prepped today cooling tightly covered in walk-in-cooler. Advised PIC cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Had food employee loosen covers of bins.
18 - insects, rodents, and animals not present

Observed insect control device above coffee machine. Advised PIC insect control devices that are used to electrocute or stun flying insects shall be designed to retain the insect within the device. The devices are not located over a food preparation area; and dead insects and insect fragments are prevented from contact with exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles.
15C - nonfood-contact surfaces clean

Observed exterior of warmer pass thru and reach in freezer in need of cleaning due to excess food debris. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
