Observed Employee mop floors then change gloves and grab food containers with out washing hands before donning gloves. Corrected on site: Employee stopped task and washed hands.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food rice cold holding in the reach in cooler about 41°F. Advised PIC all TCS food must cold hold at 41°F or below. COS: Rice was discarded.
