Observed raw chicken wings stored in cooler on top of prep counter near fryer measuring above 41 degrees F. COS: PIC discarded. CA: All TCS food items shall be cold held at 41 degrees F or below.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloths on prep counters. COS: PIV moved to sanitizer bucket. CA: Keep wiping cloths in sanitizer buckets between use.
