Observed facility without a food allergy awareness training. Advised PIC that Employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction. Advised PIC to create an allergy awareness training and produce to the Health Authority upon request.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed multiple containers of sliced cheese, shredded cheese, and sliced tomato cooling tightly covered in RIC#1. Advised PIC on proper cooling methods: loosely covered or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: PIC removed covers from sliced cheese, shredded cheese, and sliced tomato.
