Observed no allergen awareness training for employees. Advised PIC employees are properly training in food safety.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed stains under ice bin lid's food contact surface at the bar area. Advised PIC equipment shall be cleaned as often as necessary per manufacturer's recommendations.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Upon arrival, observed no cold water at handwash sinks at the main kictchen. Advised PIC facility shall meet adequate peak hot water demands and have cold water availability.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed nonfood contact surface underside of shelf above the 3-compartment sink in need of cleaning. Advised PIC nonfood contact surfaces shall be cleaed as necessary to preclude accumulation.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Upon arrival, observed cellphone on prep table in the main kitchen. Advised PIC personal belongings must be in a personal belonging area.
