Observed one metal container of cut tomatoes stored uncovered at bottom portion of prep-top cooler and two containers of flour stored uncovered when not in use, near fryer basket and grill. Advised PIC except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.
4-2B - food-contact surfaces: cleaned & sanitized

Observed microwave in need of cleaning food debris food contact surface. Advised PIC equipment food-contact surfaces and utensils shall be cleaned: At a frequency specified by the manufacturer.
10D - food properly labeled; original container

Observed multiple juices prepped on site without label inside front-service display cooler. Advised PIC that foods shall be labeled with name of contents/ common name.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed cooked macaroni and raw chicken cooling tightly covered in walk-in-cooler. Advised PIC Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Observed the most recent inspection report not posted in in public view. Advised PIC that the most recent inspection report shall be posted in public view at all times. Advised PIC to post the most recent inspection report in public view.

Observed no permit posted at time of inspection. Advised PIC post the permit in a location in the food service establishment that is conspicuous to consumers.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed stains on ceiling tiles in main kitchen area. Advised PIC the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
