Observed TCS foods hot holding at the steam table under 135 degrees. Advised PIC all TCS food shall be hot held at 135 degrees and above.
1-2A - pic present, demonstrates knowledge, performs duties
Regulation: 511-6-1.03(1)(a)-(c)1,4,5,6-14,15, 16 - demonstration of knowledge (pf)
Observed PIC not being able to answer questions correctly as it relates to the employee health policy, proper cleaning and sanitizing and vomit and fecal clean-up. Advising PIC shall demonstrate appropriate knowledge when answering EHS questions.

Observed establishment operating without signed employee agreement forms. Advised PIC to have employee agreement forms signed by employees and readily available to show EHS during routine inspections.

Observed TCS foods cooling on the counter. Corrected on site PIC moved items into the reach in cooler
