Observed ice bin at bar area 1 and 2 left open and not in use. Advised PIC food shall be stored covered protected from contamination.
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Observed at bar area 2 multiple sauce containers not labeled. Advised PIC that food shall be listed with common name.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed multiple single use articles (stirrers and straws) stored uncovered. Advised PIC to ensure single service articles shall be stored protected from contamination.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed nonfood contact surface of exterior of multiple rice cookers in the main kitchen stored as clean with white residue. Also observed nonfood contact surface of the interior of RIF in the main kitchen stored as clean with staining. Advised PIC that nonfood contact surfaces shall be kept clean and free from debris, residue, and staining. Advised PIC to thoroughly clean all nonfood contact surfaces.
