Observed sausage in steam well 2 at a temperature of 126°F. Observed potatoes in steam well 3 at a temperature of 126°F in front food service. Advised PIC that TCS food shall be maintained at 135°F or above. Corrected on site: Sausage was discarded. Potatoes were reheated to 200°F

Observed no allergy training of food service employees. Advised PIC that food employee's are to obtain training for the 9 food allergens. Correct by 4-6-2026
2-2A - management knowledge, responsibilities, reporting

Pic could not demonstrate in a verifiable manner that food employees are/were informed of their responsibility to report illness and symptoms related to food borne illnesses. Advised PIC to obtain an employee health policy and produce to the health authority upon request.

Observed multiple alcohol bottles stored inside the handsink at the bar area. Advised PIC that hand sinks shall be maintained so that they are easily accessible at all times.

Observed hand sink not supplied with paper towels at the breakfast bar at the front food service area. Advised PIC that hand sinks shall be supplied with paper towels at all times.

Observed no inspection report displayed in the food service area. Advised PIC that most current inspection report shall be prominently displayed in public view at all times, within the fifteen feet of the front or primary public door and between five feet and seven feet from the floor where it can be read at a distance of one foot away.

Observed plates and bowls for buffet service at the front food self-service not inverted. Advised PIC that tableware shall be protected from contamination by being inverted.

Observed in main kitchen area: cellphone on prep-top counter, personnel cup (smoothie drink in WIF), food container in WIC. Advised PIC that lockers or other suitable facilities shall be provided and used for the orderly storage of employee's clothing and other possessions
