Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed grill brush stored inside and obstructing hand sink near back of the main kitchen. A hand sink shall be maintained so that it is accessible for purposes other than hand washing. COS: PIC removed grill brush from hand sink.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed food contact surface of the main kitchen's bulk ice machine sheet stored as clean with staining in multiple areas. Equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. Discussed with PIC to increase the cleaning frequency of the bulk ice machine.
11A - proper cooling methods used: adequate equipment for temperature control

Observed two containers of tightly covered cut tomatoes and shredded cut lettuce cooling. Cooling shall be accomplished by using rapid cooling equipment. COS: Had PIC remove lids from containers.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed prep-top cooler 1 in need of repair. Equipment shall be maintianed in a state of repair.
