Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods not cold holding at 41F or below in cooler and greens on counter. Advised to lower ambient of cooler, discussed correct ice bath and not leaving TCS foods out at room temperature
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed hand sink in the kitchen blocked by several by several mop buckets. COS- buckets were removed. Advised hand sink must be accessible at all times
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed TCS food yams cooling on the counter at room temperature. Advised to move to cooler. Advised cooling starts at 135F
