Observed dish machine in use measuring at 151F for hot water sanitization temperature at time of inspection. Hot Water Sanitization Temperatures. except as specified in paragraph 2 of this subsection, in a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194ºF (90ºC), or less than: For all other machines, 180ºF (82ºC).

Observed non-food contact surface of containers storing scoops, spoons, and knives with debris and accumulation at vegetable prep area. Advised PIC non-food contact surfaces of equipment shall be kept free of accumulation of dust, dirt, food residue, and other debris. COS: Had PIC place items and bin at warewash area for wash-rinse-sanitize.
