6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed kale and spinach cold holding above 41F in baskets on wall in front food service area.
CA: Ensure all TCS foods are maintained at 41F or below.
COS: Kale and spinach were discarded, replaced with kale and spinach both at 37F and items were placed on TPHC.
