Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
An expired container of yogurt dated for 12/3/25 stored inside the walk in cooler and a container of blue cheese dated for 12/1/25 stored inside the reach in cooler in the middle prep line was observed. CA TCS food items held out of its original package for 24 hours and stored inside a food grade container must be discarded within 7 days. COS Food items were discarded.
15C - nonfood-contact surfaces clean

Spillage on the beverage machine was observed on the handle and outside area near the dispenser. CA Equipment and nonfood contact surfaces must be sanitized to prevent contamination. COS The machine was sanitized.

Food debris was observed on the bottom surface of the prep tables and inside cooler drawers stored throughout the kitchen and prep lines. CA Nonfood contact surfaces must be sanitized to prevent contamination. COS Nonfood contact surfaces were sanitized.
