Observed several TCS foods distinguished by an asterisk (*) held above 41F.
C/A: cold time/temperature control for safety food shall be maintained at 41°F or below
COS: items discarded
NOTE: Per owner the sweetened condensed milk is deliver refrigerated; sweetened condensed milk packaging also states "KEEP REFIGERATED"
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1-.03(5)(d) - where to wash (pf)
Observed food employee wash hands in the 3-compartment sink, put on gloves, then resume food prep after washing dishes.
C/A: Food employees shall clean their hands in a handwashing sink or approved automatic handwashing facility and may not clean their hands in a sink used for food preparation or warewashing, or in a service sink or curbed cleaning facility used for the disposal of mop water and similar liquid waste.
COS: food employee removed gloves and washed hands at hand sink in the main kitchen. EHS discussed where to wash and hand wash procedure.
