Regulation: 511-6-1.04(3)(e) - package integrity (pf)
Observed 9 dented cans stored among non-dented cans in the main prep area (dry storage area). Observed a dented can that has been opened stored in reach-in cooler (RIC) #2 in the back storage area.
C/A: Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants.
COS: open can discarded; other cans set aside and labeled "do not use", PIC intends to get credit for dented cans
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed scrambled eggs (46F), and sausage patties (47F) being held above 41F in RIC #2 located in the back storage area. Observed 2% milk (46F) being held in the counter RIC in the front food service area above 41F.
C/A: all cold TCS foods shall be held at 41F or below
