Observed several food items (croutons, parmesan, and bacon) stored uncovered on the counter of main kitchen. Observed ranch stored uncovered in the bottom of prep unit in server station. Observed a bowl of hot honey wing sauce stored uncovered on the counter of main kitchen. C/A: Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Observed pepperoni, mayo, and pickled onions stored uncovered in the bottom of the prep top cooler next to the handsink Observed lettuce stored uncovered in the prep top cooler 2. C/A: Unless foods are cooling, coverings must be used to protect from possible overhead contamination.

Observed no cold water available at the handsink located next to the prep-top cooler in the main kitchen. C/A: The water source and system shall be of sufficient capacity to meet the peak water demands of the food service establishment. COS: The cold water was turned off due to a leak, pic turned water back on.
