FROM BASE OF OPERATION: Observed, 2 door reach in cooler in main kitchen next to dry storage, ambient temperature at 42°F and going to 48° when opened. C/A: Ambient air temperature shall be maintained in good repair and be accurate within the intended range of use. Note: PIC moved food that was in the 2 door reach in cooler to another cooler. Food was cooling from breakfast.

FROM BASE OF OPERATION: Observed, 2 door reach in cooler next to 3 compartment sink, with the gasket torn and coming off door. C/A: Equipment components such as seals shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
