Observed ice machine door with an accumulation of flour and food debris on exterior and along top edge. C/A: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed, grease buildup, black soil buildup, and splatter along edge of equipment in the fryer area. Floor tile missing in front of fryer creating puddle of grease accumulation. C/A: Physical facilities shall be maintained clean and in good repair.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
Observed main kitchen vents with an accumulation of dust. Observed hood vent above fryers with an accumulation of dust and debris. C/A: Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.
