2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Facility does not have vomit or fecal procedure and no EPA approved disinfectant to kill Norovirus on site.
CA: A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed no ambient thermometers inside of prep coolers of main kitchen.
CA: In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Observed walk-in cooler and walk-in freezer at ambient temperatures above 41F. Walk-in Freezer fan was not operating.
CA: Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed several shelves in main kitchen with food debris and buildup.
CA: Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(f),(g) - wall & ceiling coverings & coatings; wall & ceiling attachments (c)
Both bathrooms located at facility observed with black colored ceilings.
CA: Wall and ceiling covering materials shall be nonabsorbent, light colored, and attached so that they are easily cleanable.
