Observed the manager not being able to provide the signed health employee policy CA 511-6-1.03(1)(c)17 - Demonstration (Pf) 17. Explaining how the person in charge, food employees, and conditional employees comply with reporting responsibilities and exclusion or restriction of food employees. Pf cos MANAGER PROVIDED A SIGNED COPY WITH TODAY'S DATE ON IT
Observed pepperoni, sliced white cheese, shredded chicken, teriyaki chicken, forest ham, sliced turkey, genoa salami at the prep top at the front service holding above 41*F Items were originally placed at the prep top at 10:00 am CA Ensure that all cold-holding, cooling, and hot-holding equipment is able to sufficiently hold required temperatures at all times. Units unable to adequately hold temp (41 F or below for cold-holding, 135 F or above for hot-holding) must be repaired or replaced. In the event that repair/replacement is not a viable option for facility for Make Line Prep Unit in question, facility must provide written procedures stating how the TCS foods in unit will be kept within the required temperature (i.e. ice added to unit under food storage containers at all times). COS: MANAGER PLACED THE ITEMS IN THE FREEZER TO COOL BACK BEFORE HE CAN PUT THEM BACK ON THE SERVING LINE
