Observed multiple containers of raw chicken stored over raw beef in walk in cooler of main kitchen area.
CA: Raw food shall be stored and separated based by type and minimum internal temperature to prevent cross contamination.
COS: Manager rearranged raw foods in walk in cooler.
4-2B - food-contact surfaces: cleaned & sanitized

Observed orange and brown residue on dispenser of ice machine in main kitchen area.
CA: Food contact surfaces shall be clean to sight and touch.
COS: Manager cleaned and sanitizer ice machine.
6-2 - proper date marking and disposition

Observed several containers of shredded cheese stored in walk in cooler past 7 day expiration date in main kitchen area.
CA: A food that requires datemarking shall be discarded if it exceeds 7 days.
COS: Manager discarded cheese.
