4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
The dishwasher tested at 0PPM for chlorine. CA The concentration of the dishwasher must test at 50PPM for chlorine. COS The 3-compartment sink will be used until the unit is repaired.
4-2B - food-contact surfaces: cleaned & sanitized

Sanitizer buckets were observed not available inside the food prep areas of the kitchen. CA Sanitizer buckets must be stored inside food prep areas to prevent contamination. The concentration of the sanitizer buckets must test at 200PPM for QAC or 50PPM for chlorine. COS The sanitizer buckets tested at 200PPM for QAC.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Several damp wiping cloths were stored on the countertops inside the kitchen. CA Damp wiping cloths must be stored inside the sanitizer bucket when not in use to prevent contamination. COS The wiping cloths were stored inside the sanitizer buckets.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
An accumulation of flour and spillage was observed on the countertops, underneath the prep tables and inside the ice cream deep freezer. CA Nonfood contact surfaces must be cleaned and sanitized.
