Observed several containers of spices and egg batter not in active use and stored uncovered on counter tops through out main kitchen. Observed ice bins behind not in active use and uncovered. C/A: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: Foods covered

Observed several containers of spices removed from original packaging without identification in main kitchen, on shelf. C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. Correct within 72 hours

Observed drink cooler with ambient of 44F in main kitchen. C/A: Cold holding equipment shall be kept in good repair. Correct within 72 hours. Facility may not store any TCS foods in unit (including half/half and whipped cream).
