Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
The sanitizer buckets stored inside the sushi bar and kitchen was empty. CA The concentration of the sanitizer must test at 50PPM for chlorine or 200PPM for QAC. COS The sanitizer buckets tested at 50PPM for chlorine.

Mold was observed inside the ice machine. CA Equipment must be sanitized to prevent contamination. COS The ice machine was sanitized.

A container of baby spinach had an expiration date of 11/28/25 stored inside the reach in cooler. CA TCS food items must be discarded by the expiration date to prevent foodborne illnesses. COS The spinach was discarded.

Several sauce squeeze bottles stored inside the sushi bar and seasoning containers stored inside the kitchen was observed not labeled. CA Food items held out of its original package and stored inside a food grade container must be properly labeled.

Food debris and spillage was observed inside the containers where the clean soup bowls were observed inside the kitchen. CA Nonfood contact surfaces must be cleaned and sanitized.
