6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple items (see asterisk) in the refrigerator cold holding over 41F.
CA: When cold holding TCS foods shall be maintained at 41F or below.
COS: Items were discarded. Recommended facility discards all TCS foods currently in the refrigerator - facility did not want to. Facility is not to use the refrigerator in the main kitchen until it is serviced or reaches 41F or below. Facility plans to use personal use fridge in men's lounge until the one in the main kitchen is fixed. Discussed separation of personal use items in fridge.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed pink slime build up on interior of ice machine in main kitchen.
CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Facility has 10 days to correct and send a photo to EHS.
