6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several cold holding violations in walk-in cooler of main kitchen. Per PIC, the walk-in cooler started malfunctioning an hour and a half prior to temperatures being taken. C/A: All food being stored for cold holding must be 41F or lower at at all times during operation. COS: All TCS foods were moved to the walk-in freezer.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed onions being washed in the warewashing sink of main kitchen. C/A: Raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only. COS: Onions moved to the produce sink.
