CAPOZZI'S

Observed numerous trays that were stacked wet on the shelf in the main kitchen near the WIC C/A Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food; COS: trays were unstacked

Observed quaternary ammonia used as a food contact surface sanitizer but no test strips were available to check the concentration. CA: Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Pf Obtain test strips for quaternary ammonia within 3 days. Provide receipt to Health department.
