Observed ranch and blue cheese holding above 41f in the reach in cooler in the main kitchen. C/A:TCS food shall be maintained at 41f or below when cold holding. COS: discarded.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed cold water handle broken on hand sink in main kitchen. C/A: Hot and cold water should be available at hand sinks
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed several mising ceiling tiles. C/A: All physical facilities shall be maintained in good repair.
