Observed cut fruit and sauce stored uncovered in prep cooler. Observed croutons and bacon bits stored uncovered on counter near prep coolers. Observed mozzarella sticks and onion rings stored uncovered in reach in freezer. C/A: All food products unless cooling must be covered to prevent contamination. COS: PIC covered all food items at time of inspection.

Observed, in main kitchen, ice machine with a buildup of pink slime mold and black mold around ice chute. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Employee cleaned & sanitized ice chute and top portion of ice machine interior.

Observed, in main kitchen, dish machine sanitizer initially tested at 0 ppm chlorine as employee was washing/rinsing/sanitizing utensils and dishes. CA: Chemical sanitizer of dish machine shall be between 50-100 ppm (Chlorine). COS: PIC primed dish machine. Dishes that were washed/rinsed/sanitized were re-washed/rinsed/sanitized. Dish machine reading 50 ppm (Chlorine).
