Observed raw chicken stored above raw hamburger and raw beef in the bottom of the prep top cooler in the main kitchen. Observed raw pooled eggs stored above carrots and a vegetable mix of peas and carrots in the walk-in cooler in the main kitchen. Observed raw beef stored above brewed sweet tea in the walk-in cooler in the main kitchen.
CA: Raw animal proteins shall be stored according to their minimal required cook temperature to protect from cross contamination.
COS: Vegetables were moved above eggs in walk-in cooler. Beef/hamburger was moved above chicken in prep top cooler. Beef was moved to on top of raw chicken in walk in cooler.
4-2A - food stored covered

Observed uncovered carrots and celery on prep top in main kitchen. Observed raw beef, raw hamburgers, raw chicken, and raw tilapia stored uncovered in the bottom of the prep top cooler in main kitchen. Observed fish stored uncovered in the walk-in freezer in main kitchen.
CA: All food stored shall be kept covered to protect against contamination.
COS: Covers were added to all items.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observed two containers of purple multi-surface cleaning solution stored in working containers and without labels in the front food service area. Observed a container of yellow bleach cleaning solution store in a working container without a label in the main kitchen under the 3-compartment sink.
CA: Working containers of chemical removed from its original containers must be labeled with a common name.
COS: Containers labeled.
