A container of fries, lemon and salt and pepper mix stored on the prep line was observed not covered. CA Food items must be stored covered. COS Container lids were placed on the food items.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Food debris was observed on the blade of the vegetable slicer and can opener stored inside the food prep area of the kitchen. CA Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS The slicer and can opener was removed and placed inside the dishwasher.

Several sauce squeeze bottles stored inside the prep unit and top reach in cooler on the prep line was observed not labeled. CA Food items must be labeled to include the common name of the food item.
15C - nonfood-contact surfaces clean

Grease build up was observed on the hood above the grill on the prep line. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

A build up of dust was observed on an operational fan stored inside the bar. CA The fan must be cleaned and or replaced.
